Orange Macaroni Pudding Recipe

Ingredients to serve four:

-          2 tablespoons (25 g) margarine or butter

-          4 tablespoons (25 g) flour

-          1¼ cups (300 ml) milk

-          2 oranges

-          2 tablespoons (30 ml) sugar

-          ⅔ cups (100 g) seedless raisins

-          ½ teaspoon (2.5 ml) ground cinnamon

-          1½ cups (150 g) macaroni shells

A sharp, sweet sauce complements the bland pasta in this unusual macaroni pudding.

Melt 2 tablespoons of margarine or butter in a saucepan. Stir in 4 tablespoons of flour. Add 1¼ cups of milk and bring to the boil, stirring constantly. Continue boiling and stirring the mixture until the sauce thickens.

Reduce the heat to the simmering point and add the grated rind and juice of 2 oranges, 2 tablespoons of sugar, ⅔ cup of seedless raisins and ½ teaspoon of ground cinnamon. Mix well and continue to simmer for 2 minutes.

Add 1½ cups of macaroni shells to a large pan of boiling salted water and cook for 5 minutes, or until the shells are just tender. Drain the macaroni shells and fold them into the hot sauce.

Serve the pudding immediately.
