Lamb Chops Tartare

Ingredients to serve four:

-          1¼ cups (300 ml) yogurt

-          1 tablespoon (15 ml) chopped gherkins

-          1 tablespoon (15 ml) capers

-          Parsley springs

-          Stuffed olives

-          Salt

-          Pepper

-          4 lamb chops

Preheat the oven to 375⁰F (190⁰C).

Pour 1¼ cups of yogurt into a bowl and add 1 tablespoon of chopped gherkins, 1 tablespoon of capers, 2 tablespoons of chopped parsley and 4 chopped stuffed olives. Mix well. Season it to taste with salt and pepper.

Put 4 lamb chops into a shallow baking dish. Pour the yogurt mixture over the chops. Bake for 1 hour, or until the lamb is tender and the yogurt has set.

Garnish with slices of stuffed olives and parsley springs and serve immediately.
