Ingredients to serve four:
- 1 tablespoon (15 ml) corn oil
- 2 cups (250 g) sliced onions
- 1½ lb (700 g) ground beef
- 1 small tart apple
- 1 tablespoon (15 ml) curry powder
- ½ cup (50 g) seedless raisins
- ½ cup (50 g) peanuts
- 1 small lemon
- Salt
- Pepper
- 2 bay leaves
- 1 egg
- ⅔ cup (150 ml) milk
Preheat the oven to 350⁰F (180⁰C).
Heat 1 tablespoon of corn oil in a large saucepan. Add 2 cups of sliced onions to the pan and fry for 3 minutes, or until the onions are just beginning to brown. Add 1½ pounds of ground beef with 1 chopped small tart apple and fry, stirring constantly, for 3 minutes.
Add 1 tablespoon of curry powder, ⅓ cup of seedless raisins, ½ cup of peanuts, the juice of 1 small lemon, salt and pepper. Mix well. Cook over very low heat for 5 minutes.
Transfer the beef mixture to an ovenproof dish or casserole. Press 2 bay leaves into the top, cover and bake for 45 minutes.
Beat 1 egg with ⅔ cup of milk. Remove the cover from the dish, discard the bay leaves and pour the liquid over the meat. Return the dish to the oven and bake for 15 to 20 minutes, or until the topping is set.
